Easy No-Bake Cheesecake

This is the easiest no bake cheesecake recipes you will find! I originally came across this recipes a few years ago at a Weight Watchers meeting. As the years have passed I've adapted it into a not so Weight Watchers recipe. This has become a true classic at our house. 


1 Graham Cracker Pie Crust
1 tub 8oz Cool Whip (room temperature, I used extra creamy)
1 tablespoon lemon juice
1 8oz block of cream cheese (room temperature)
1/4 cup of sugar

Place cream cheese and Cool Whip in large bowl. Blend until smooth.

Add 1/4 cup sugar. Blend again. At this point I will usually taste it to see if I should add more sugar. Add 1 tablespoon lemon juice, to taste.

Spoon into pie crust.

If you used extra creamy, your cheesecake will be really thick and ready to add you filling. If you used  regular, light or fat free, you will want to refrigerate your pie until firm.  

Add filling of your choice.

This guy really enjoyed this recipe. He watched my every step from his highchair and begged for taste after taste. I stepped away for just a second  and when I came back here he was,on top of the island, getting a taste for himself.
