3 Point Cupcakes

Lately we've been trying to eat healthier. I've been going back to some of my favorite Weight Watchers recipes.This one is one of my favorites



For a gal on Weight Watchers these cupcakes are pretty awesome,(I'd eat them even of I wasn't on weight watchers). My husband LOVED them, and he is SUPER picky! Of course the kiddo raved over them. These are quick, light, and tasty.. What else could you ask for??







3 Point Cupcakes

1 box cakes mix (I used Betty Crocker lemon cake mix)
12 oz. Diet Sierra Mist
1 tub Cool Whip
1 tablespoon instant vanilla pudding
a splash of lemon juice

in a large bowl, mix cake mix and 12 oz of Sierra Mist. Line cupcake pans and bake according to directions.

While the cupcakes are baking mix up the frosting. 

Allow the cupcakes to cook completely. I placed mine in the freezer for about 15 minutes. This keeps them from sticking to the cupcake liners. 

Top each cupcakes with 2 tablespoons frosting. Keep cupcakes refrigerated in a air tight container. 

Frosting: 
Mix 1 tablespoon and Cool Whip in a medium sized bowl, add in the splash of lemon juice. Refrigerate until set, about 10-15 minutes.

The Penny Princess featured on Hometalk

Wow, wow, I am so excited to tell you guys that one of my projects (here and here) is being featured on Hometalk.

    6 Last Minute Valentine's Day Ideas

    Just in case you forgot what day it is... Here are 6 last minute Valentine's Day Date Ideas!

    1.A Picnic in the Park-
    This would be a great idea that would not take much to plan. Make sure you have a nice wine on ice and all the trimming cheese, fruit and soft music. You could even do this at night to make it even more romantic. A picnic by candle light, amazing!

    2.A Romantic Dinner at Home-
    Try this especially if you don't have a sitter (like us). Put the kids to bed and have a romantic dinner just the two of you.  You could even enjoy a movie all cuddled up on the sofa.

    3.A room with a view-
    Lots of hotels will be booked tonight, but I am sure you can find a room somewhere, although I'm sure you will pay a pretty penny for it. ..And since you've already broken the bank, fork out a little extra for room service or breakfast in bed.

    4.A Day at the Spa- What girl doesn't LOVE the spa? Make it a couples date or send her on her own with a night of pampering and a nice dinner after. 

    5.See a live Band-Lots of bars ,clubs and restaurants will be hosting special events tonight. Take her(or him) to see a live band and  catch a late dinner.

    6.Catch a movie- Take her to see a movie tonight.  If you have a fancy theater, that serves dinner or drinks, take her there to mix it up a bit. 50 Shades of Grey came out this week... Finish up your night in your PJ's...if you know what I mean.

    Valentine's DIY Printable

    So here I am again in the 11th hour, finishing up my son's Valentines for his party that is ... TOMORROW! I wrote weeks ago about how I was going to get this done early this year and I even lined up a few quick V-day DIY's for all (5) of you... Well, I guess there's always next year. 

    Since I decided to create something from scratch. I might as well share it with all of you guys. This was a really quick DIY and it only took about 30 minutes from start to finish. I even made a template for you to use, here it is! 
    Just print, cut and staple and ... DONE!

    What you will need:
    Sandwich bags
    card stock or printer paper
    Cookies ( We put 3 in each bag.)
    Stapler

    Minnie Mouse Cupcakes and Cupcake Stand

    These cupcakes were for my niece's Minnie Mouse baby shower.I think we made a million of these! Find the recipe here

    These were extremely easy. We frosted them using a pastry bag and a Walton 2D tip, we topped them with a small pink gumballs and used mini Oreo's for ears. 




    This beautiful cupcake tower was made out of pizza boxes, duct tape and fancy paper.  



    Between the boxes we used small black glass candle holders that we covered with clear glass bowls.


     My sister-in-law created this Minnie mouse head out of Styrofoam balls. She painted them black. (Did you know you can't spray paint Styrofoam?I found that out the hard way LOL!!) She attached the ears and added a cute pink bow.



    We had a blast!!

    10 min. Baked Hotdogs

    My Kids really LOVE hot dogs. So one day  I decided to try this. It has since become one of our family favorites.



    Cook hot dogs and chili normally. In a well greased dish, prepare hotdogs. Buns first, then hotdogs, top with chili and cheese broil on high for 3 to 5 minutes or until hot. The buns come out soft and buttery. These are delicious!
